It's been more than a year since I last posted on Lunchbox. My excuse is this: someone stole my domain name. If you typed in my web address, you got a lot of Korean characters instead of my old green metal lunchbox.
I'm partially to blame. I guess I didn't renew the domain in a timely manner and it was so attractive to someone in Korea, they snapped it up. Go figure. In any event, I went from an .org to a .net, and here I am, technologically smarter, even if it did take a year to get it all figured out.
Admittedly, I also needed to take a break to recharge creatively. I was running out of juice and needed to go do some other non-food things. But it's not as if food stopped happening while I was away. I mean, in that year, kale happened. Everyone is eating kale now, like a bunch of lemmings, looking for the fountain of youth. Go into Whole Foods, and they have an entire kale section, with crunchy kale snacks, a variety of kale salads, even kale smoothies, an oxymoron if there ever was one. They sell t-shirts with the word "Kale" on the front in the same typeface as Yale University, elevating the tough green to elite status. Is kale now the Yale of green leafy vegetables?
Restaurants, too, are all goo goo-eyed over kale. But I have to wonder, does anyone really like kale? If they're eating it raw, they don't. I ate raw kale once, in a caesar salad, and it was like eating palm fronds. Or straw from a barn, the kind that requires horse teeth and the patience to chew something for the good part of an afternoon. But I guess if it extends my life expectancy by two weeks, then I should embrace it, right? Two weeks is two weeks.
Cooked kale is a different story. I embrace healthy greens of all kinds, as long as they're edible, which raw kale is not. Blanch kale and make a pesto. Throw it in soup like any leafy vegetable. Stew some kale with garlic and white beans - very French. Fry it up and it becomes kale chips, which leave you feeling virtuous, even if they are nutritional cousins to donuts. Oh, and speaking of donuts, cronuts. They, too, happened while I was away.
